Hello friends....and Happy Monday after the Super Bowl!
We are super pumped to share this recipe with you today, because no matter what kind of foodie you may be, this has been one of our biggest hits yet and we are sure that you will love it! Side note: Every ingredient gets thrown into a crock pot, does it get any easier? Plus, the flavor is to die for! Super easy, lots of flavor, and you will likely have enough leftovers to feed you for days = success!
About a year ago, we had a snow day (here in Charlotte, that means serious business even with an inch of snow on the ground). We decided that if we were going to be stuck inside all day and potentially all night, why not make something in the crock pot and let it cook all day! I came across a basic White Chicken Chili Recipe that we eventually made our own with some additional flavors. After sampling and adding things throughout the day, we got it where we wanted it and decided we liked it so much that we would invite the neighbors over to enjoy it with us. Needless to say, those same neighbors still ask us when we are having White Chicken Chili night! What is your favorite Chili Recipe? Feel free to share it with us!
What you will need:
(3 to 4) Large Chicken Breasts
(2) Cans of Whole Sweet Corn (not drained)
(1) Can of Black Beans (or any bean of your choice) - DRAINED
(2) Cans of Rotel (not drained)
(1.5) Packets of Hidden Valley Ranch Dressing Mix
(1) Tbsp. of Cumin
(1.5) Tbsp. of Garlic Salt
(1) tsp. of Chili Powder
(1) tsp. of Onion Powder
(1) Block of Cream Cheese (we use the reduced fat)
(1) Tbsp. of Black Pepper
Dash of Salt as preferred
To Garnish: We like to chop up fresh cilantro, add a dollop of sour cream, and mix in some finely shredded Mexican/Fiesta Cheese
We placed the chicken breasts in first and then pour everything over it. After cooking on High for 4 hours or Low for 6 hours, we take the chicken out and shred it (it should shred very easily), and simply put it back in the pot with all of the other ingredients. We also find it best to add the Cream Cheese with about an hour left as it melts pretty quickly and leaves you with a creamier finish.
TADA! You are all set - and we can't wait to hear how yours turned out! This pairs really well served over rice, grits, and even Tostitos Chips! For this round, we made Green Chili Cornbread (mmm, mmmm, good)!
