{Super Bowl Party Pizza} Cheeseburger Tortilla Pizza

Okay, y'all. We get it - this looks like another "football" food that is packed with calories and fat. Guess what - it's not! We have recently started Weight Watchers as a way to not only shed a few unwanted pounds, but to really gain control and awareness of portions and nutrition. That being said, it is hard to find things that sounds really yummy that still follow our points system. Well, after a lot of recipe searching to meet our needs I found this Cheeseburger Tortilla Pizza. This "pizza" fit right in with the points system and with minimal substitutions of what we consider the "fatty stuff" the flavor was EXCELLENT! Not to mention - we had been craving a cheeseburger lately! Another plus, it has a prep time of only 15 minutes and a cook time of 15 minutes. A delicious 30 minute meal, sign us up! Need something quick, yummy, and not over filling for your Super Bowl Party? This is the perfect recipe for you! Ingredients 2 spray(s) cooking spray 3⁄4 pound(s) uncooked 93% lean ground beef 3⁄4 cup(s) uncooked red onion(s), divided 1⁄2 cup(s) ketchup (*we added a tbsp. of light mayo to mix in with the ketchup to make it more of a "pink" sauce and it was delicious) 4 medium whole wheat tortilla(s) 3⁄4 cup(s) low fat shredded cheddar cheese 1⁄4 cup(s) low-sodium dill pickles, chopped 1 cup(s) fresh tomato(es), chopped 1 cup(s) romaine lettuce  Instructions Preheat oven to 450°F. Coat 2 baking sheets with cooking spray. Heat a large nonstick skillet over medium-high heat. Add beef and 1/2 cup onion; cook, stirring and breaking up beef with a wooden spoon, until beef is browned, about 6 minutes. Remove from heat; stir in ketchup (and light mayo if you choose to add it). Arrange tortillas on prepared baking sheets. Divide beef mixture over tortillas in an even layer; sprinkle each with 3 tablespoons of low fat cheddar cheese. Bake until bottoms of tortillas are crisp and cheese is melted, about 5 to 7 minutes. (We baked ours for exactly 6 minutes and they turned out great) To serve, sprinkle each pizza with a tablespoon remaining onion, 1 tablespoon pickles, 1/4 cup tomato and 1/4 cup lettuce. Cut each pizza into 4 wedges to serve. Yields 1 pizza (4 wedges) per serving. *We also drizzled the light mayo and ketchup over the top of the pizza for added flavor! We recommend using the "Just Mayo" brand as we find it to be the most flavorful. Another flavorful additive that we like to add to just about anything is....GREEN ONION. So, so good.
